  • 4 3/4-ounce packages fresh bay leaves, divided
  • 6 to 7 lemons, very thinly sliced into rounds, divided
  • 1 3-pound center-cut salmon fillet with skin
  • Olive oil (for drizzling)

Recipe Preparation

  • Arrange eight 24-inch-long pieces of kitchen string, side by side and 1 1/2 inches apart, on surface. Overlap bay leaves atop strings in rectangle about same size as fish. Place fish packet in grilling basket; close basket (basket does not have to close completely in order to support fish). DO AHEAD Can be made 2 hours ahead. Chill salmon in basket. Bring to room temperature before grilling.

  • Prepare barbecue (medium-high heat). Grill fish in basket until just firm to touch and thermometer inserted into thickest part registers 135°F, holding basket sides together to turn fish, about 20 minutes per side. Transfer fish to platter, with string knots up. Remove strings, bay leaves, and lemons from top side. Drizzle with oil; serve.

Steps to Making Grilled Salmon Burgers

1. Make the burger mixture. Combine the eggs, shallot, parsley, salt, pepper, and celery seeds in a food processor fitted with a blade attachment and pulse just until combined, about 5 pulses. Add about a third of the salmon and pulse 5 times until most of the large pieces are slightly chopped. Add another third of the salmon, pulse 5 more times, then add the last third and pulse 5 times more until there are equal amounts of very small, medium, and large chunks. (Do not overprocess, as it will lead to tough, dry burgers.)

2. Transfer the mixture to a large bowl and stir in the panko until thoroughly combined. Divide evenly into 8 (3-inch) patties about 1/2 inch thick (they will be about 1/3 to 1/2 cup each).

3. Heat an outdoor grill to medium high (about 375°F to 425°F). When the grill is ready, use tongs to rub the grate with several layers of paper towels dipped in vegetable oil.

4. Using a flat spatula, transfer the salmon patties to the grill, close the grill, and cook undisturbed (do not press down on the patties) until grill marks appear on the bottom, about 5 minutes. Using a clean spatula, flip the burgers, close the grill, and cook until the patties are just cooked, about 4 minutes more.

  • 1 whole salmon, cleaned and head removed
  • 1/4 cup (60 ml) dry white wine
  • 1 small yellow onion, peeled and minced
  • celery leaves
  • 8 basil leaves
  • 3 tarragon sprigs
  • 2 rosemary sprigs
  • orange slices with peel
  • salt
  • white wine sauce (recipe follows)
  • For White Wine Sauce: 1/4 pound(120 g) unsalted butter
  • 2 shallots, minced
  • 6 tablespoons all-purpose flour
  • liquid in which salmon baked
  • equal parts dry white wine and boilinf water
  • 1/2 cup (125 ml) cream
  • 2 egg yolks
  • salt and freshly ground black pepper


Step 1

Leave salmon whole or remove the head. Rinse under cold running water and place on paper toweling to dry.

Step 2

Place the wine in a saucepan and add the remaining ingredients, except the salt and wine sauce. Let the resulting mixture simmer, uncovered,1/2 hour without boiling. Preheat the oven to 375°F(190°C).

Step 3

Place salmon lengthwise on a long sheet of foil, bring up the edges and pour the wine mixture over the fish. Sprinkle with salt. Completely enclose the fish, crimping the foil to seal the edges tightly. Place the foil-wrapped fish in a large baking pan and transfer to the oven. Bake until the fish flakes easily when tested with a fork, about 1 hour.

Step 4

Serve salmon baked in foil hot with white wine sauce. Note: A small 3-or 4-pound center cut of salmon may be baked in exactly the same manner as the whole salmon. For a center cut of that size, use half the wine-herb mixture and prepare half the amount of sauce. Cook 10 minutes a pound in the 375°F (190°C) preheated oven.

Step 5

For White Wine Sauce: While the salmon is baking, melt the butter in a saucepan and add the shallots. Cook until transparent but not brown. Using a wire whisk, stir in the flour until it is well blended. Cook over low heat 3 minutes. Let stand until the fish is done.

Step 6

When the dish is removed from the oven, use the large spoon to dip out the juices and add to the butter mixture in the saucepan, stirring constantly over moderate heat .Continue stirring vigorously and add enough wine and boiling water to make 5 cups of liquid. Cook the liquid, stirring until thickened and smooth. Add the cream and season with salt and pepper. Strain through a fine sieve. Just before serving, reheat and add the egg yolks lightly beaten with a little of the hot sauce. Cook 2 minutes over low heat but do not let boil.

Made with just 8 ingredients (plus salt and pepper), this Roasted Salmon recipe is perfect for weeknight dinner. Just spread the garlic butter over each salmon fillet then roast with Asparagus in the oven until fish is cooked through. The dinner will be ready in only 20 minutes. Gluten free and Keto.

Just like you, I too love healthier, delicious and cleaner home cooked meals. If that meal is also easy to put on dinner table. it makes my day even more content. Salmon and Asparagus is timeless combination. Roasted with spread of garlic butter and seasonings. salmon gets buttery melt-in-mouth delicious and asparagus crisp tender.

Yummy Roasted Garlicky Salmon dinner which is also low-carb, has majority of good fats, greens and one sheet pan to clean! This dinner makes everyone happy. This is bay-far our favorite Wednesday dinner. I look forward to it because on this day, I only get in the kitchen 20 minutes before Vishal arrives.

To roast the salmon, I preheat the oven at 450 degrees Fahrenheit. Yes, 450. (you reading correct). If you want the real roasted flavor, this the best temperature to roast. I only request to make sure: 1) Oven is pre-heat at 450 degrees before cooking 2) Check the salmon at 7 minutes if it is done. don't let it overcook.

While oven preheats. I mix the Garlic Butter. Actually it is a garlic and herb butter. Markets are so full of fresh herbs this season. I bet you will have plenty in refrigerator. If not, don't worry. Just use dried herbs.

To make Garlic Butter, I mix following ingredients:

  1. Butter (at room temperature)
  2. Garlic
  3. Herbs - Thyme, Parsley, Oregano
  4. Lemon Juice. (If you don't have lemon. Replace with 1 tsp lemon-pepper seasoning. Skip salt and pepper)
  5. Salt and Pepper.

Once Butter is ready. I season asparagus and salmon with salt and pepper. Spread asparagus on sheet pan. Rub garlic butter on salmon fillets. (Preferably both sides to get more robust roasted butter flavor.) Place salmon fillets in between asparagus as shown in the pictures.

Roast at 450 degrees Fahrenheit pre-heated oven for just 8 minutes.

Salmon fillets are perfectly roasted, cooked-to-perfection in 8 minutes. Asparagus is crisp tender. Just like it should be. Serve and enjoy!
